Does anyone know, is it easy to change the primary email address on an FBA account?
I will be setting a new FBA account up and I will need to use a temporary email address at first, so wanted to make sure I can update it to a different email once I set up a proper email address.

Well, you better get it ALL correct the first time.
Make sure you have ALL of your documets and ALL of them have the exact same information, including abreviations for st./street corp/.inc/corporations, etc.
Changes after the fact will leave a threat signature and could get you shut down until that is cleared up. Never make changes before the holiday shopping season just in case things go bad. Its better to be shut down down during the summer months when sales are slow.
If this implies a second seller account, don’t do it.
