@mint_chocolate is correct. There is no limit to the number of products you can add to the Amazon catalog.

There are no limits as both @FunkyMonkey and @mint_chocolate say. However, I would strongly advise you to start slow, in order to avoid any suspensions over suspicious activity.
Keep in mind that Amazon may ask you to provide invoices for any product which you list.
