This entirely depends on whether you are simply changing the legal entity or actually transferring ownership of the business to another person. Amazon generally treats seller accounts as non-transferable when the underlying business ownership changes, in which case the new owner may need their own Seller account.
However, Amazon does have a Legal Entity Change/Transfer Account process for certain situations. Where that option is available, it is normally found under Settings → Account Info → Business Information → Transfer Account, after which Amazon verifies the new entity and its beneficial owners.
I would therefore not simply replace the name, bank details, tax information and identity documents manually, because that can trigger verification or related-account problems. First establish whether this is a change of legal entity with the same ownership or an actual sale/transfer to a different owner, and then follow the process Amazon specifies for that situation.
