How do they let me know all the items are received?
Do I have the send the sku labels to them?
Do I give them a shipping label everytime?

It depends on whatever agreement you have with them. Ask them and you shall get your answer then choose whichever prep centre you like best.

In short a prep center will receive your stock, inspect, prep, create the shipment on your behalf and ship to Amazon.
You need to record every order that goes to the prep center in their spreadsheet/ software and thats pretty much everything…
If any issue (orders not received, miss-match , missing/damaged units etc) they need to notify you straight away.
