My current issue is that I am unable to sign into my seller account because they are forcing me to change my password. The problem is I no longer have access to that email account so I am stuck in limbo. I created a case but have been waiting two days.

You will need to re-verify your identity through submission of documents.
You should see an option that you have lost access to your credentials and submit a request for document verification from there.
But you will need to have access to at least your phone or charge method on file.
