Can I stick the code on the outside of the box so customers can find the tutorial on how to assemble it?

You are supposed to cover all barcodes just in case their systems confuse them with something else but as yours is a link to a website, there can’t be any confusion.
The only possible problem might be if the qr code leads the customer to a website where they can purchase your item so this might be taken as encouraging offsite sales. But as it just a YouTube link, it should be fine.

Very bad choice for placement of assembly instructions. Also, since it’s a QR code, many people may not know how to use it.
I would create a small cute booklet and include it inside, with each product.
